These Fruit Icy poles are a lifesaver when the weather heats up! They are completely healthy, have no artificial sweeteners or sugars and taste amazing.
If I’m honest I originally made them for when my nieces visited, as we don’t have many kid friendly desserts or treats in the house and I wanted them to enjoy visiting aunty Bell and eating the “treats” I made them (they don’t have to know they are healthy) But when I first made them, and had a little taste to make sure they would like them, they were so yummy and fresh I think I ate the first batch myself and had to make more for them :p!
“Life’s a beach, enjoy the waves”
Here is the recipe! I hope you all enjoy them and have some stored in the freezer for when your sweet craving strikes or to cool down on the hot summers days that are just around the corner!
- Chop fruit up to desired size – I like mine quite small.
- Fill the ice block moulds* ¾ of the way with the chopped fruit.
- Squeeze some lime juice in each mould.
- Fill with coconut water.
- Freeze overnight.
* I recommend getting good ice block mould’s that are BPA free. It doesn’t really matter which ones, just check they say BPA free (all plastics you use need to be BPA free) Some great ones I like are by Lebice.
